Dominican and Greek food: two kitchens, honored separately
July 23, 2026 · Olive & Oregano
Dominican and Greek food are two distinct culinary traditions, not one blend. Dominican cooking is hearty and home-style, built on sofrito, rice, beans and plantains. Greek food is bright and fresh, rich in vegetable dishes and salads alongside grilled meats, olive oil and herbs. Olive & Oregano serves both, kept separate and never fused.
What is Dominican food?
Dominican food is the home-style cooking of the Dominican Republic: comforting, savory, and built around a few foundational elements. Sofrito (a base of peppers, onion, garlic and herbs) flavors stews like pollo guisado. Plates typically pair rice, stewed beans, and a protein, with fried green plantains (tostones) alongside.
- •Pollo guisado: stewed chicken in a rich red sofrito sauce
- •Pernil: slow-roasted pork
- •Rice and beans (habichuelas) and tostones
- •Rotisserie chicken with traditional sides
What is Greek food?
Greek food is fresh and bright, and especially rich in vegetable dishes and salads. It is built on olive oil, herbs, ripe vegetables and legumes as much as on grilled meats. The horiatiki (village) salad skips lettuce entirely in favor of ripe tomato, cucumber, onion, olives and a thick slab of feta, and greens, beans and vegetables anchor the table alongside handhelds like the gyro and souvlaki.
- •Horiatiki: the authentic Greek salad, no lettuce
- •Vegetable dishes: gigantes (baked giant beans), briam (roasted vegetables), horta (wild greens)
- •Dolmades: stuffed grape leaves
- •Spanakopita: spinach and feta in phyllo
- •Gyro and souvlaki: the grilled handhelds
Why keep them separate?
Because they are two real traditions, each worth honoring on its own terms. Olive & Oregano is not “Mediterranean” and not a fusion concept. The Dominican kitchen and the Greek kitchen each stand on their own. You choose the plate, not a blend of both.
